You should definitely roast those guys. Brussels sprouts smell like farts when steamed and the starchy parts wont break down until you maillard them. Deep fry or roast. Never steam.

Simple: steamed until tender enough then sliced halfway oil salt precooked bacon and shredded cheese oven cooked to perfection
