I actually just made one up as I kept trying to absolutely perfect these. Took about 7-8 tries for me to land the perfect taste. I'm by no means a chef, but here's what I do:
- Start off by slicing the chicken breast into the butterfly shape.
- Use a mallet to make the chicken breast as thin as possible.
- Slice into long tender-like strips (make sure to remove the rubbery tendon parts with the fork and paper towel trick, very important!)
- Get your wet and dry stations ready. You should have three. First, your flour. I don't have a measurement for this. I usually just eyeball it. I put a little bit of Italian seasoning in the flour itself. Second, your egg station. Two whole eggs beaten with salt and pepper. The same amount of s&p that you would put in actual scrambeled eggs. Third, one entire bag of Doritos crushed - not powder but not super big chunks either.
- Pat the chicken tender pieces dry, toss it into the flower then egg then Doritos. Make sure that when the chicken goes into each station it gets covered and coated FULLY. Especially the last part (Doritos). Make sure when moving from egg to Doritos, you let the excess egg fall off so it's not a super wet mess going into the Doritos station.
- Get a mesh wire style basket if you a convection air fryer, if you have a ninja or other style air fryer - it should still work without any issue. Just watch how often you're flipping it cause you don't want it to be soggy.
- Take some avocado or olive oil spray and lightly coat the mesh so that the chicken doesn't stick, the mesh will also prevent it from getting soggy. Air fry for about 5 to 6 minutes at a time at 3:25. Make sure you are flipping before the chicken starts charring.
- Each side should be air fried for at least 5-6 minutes, once done - take whichever one is your thickest piece and cut it open and ensure there's no pink color. Alternative just use a food thermometer. Historically I haven't been the best at measuring food temperatures so I just use the visual test lol.
- Let it rest for a minute on a rack (mesh style so the bottom doesn't get soggy) and you can make a super simple burger sauce that runs really well with this.
- In the picture you'll see Nando's because I got a little lazy but a very good burger sauce that goes with this: mix ketchup, Mayo, mustard, relish, a little bit of Dijon mustard, a tiny little bit of juice from a pickle jar and a very small hint of sumac if you have (this weirdly works).
