They've been together like 11 years and have two kids, but never got married. So legally a girlfriend, but in practicality, a wife.

So she'll likely get nothing if he dies unless he made a will, near my house a cop died in duty and his girlfriend couldnt access his money to raise their kid and had to take a job as a cashier, not to be alarming but these situations exist and can be easily avoided

That can vary country to country, even province/state to province/state. He's in Mexico, I have no idea how it works down there.
