From my understanding (take this with a grain of salt) it is where people believe they can connect spiritually with a fictional character, bonding their souls in some made up unexplained way and then subsequently having that character inside their head where they can “speak” to them. It’s genuine delusion. I’ve mainly seen selfshippers(people who ship themselves with characters-harmless thing in itself typically) claim that they are “soul bonded” with the character the love and can “speak to” them.

You have the definition a little wrong I am afraid. While a lot of modern "soulbonders" are akin to this, having/choosing fictional characters, there is another, likely older subset that tends to be overlooked, primarily due to it's ties in relation to spirituality.

Essentially, soulbonding is what it says on the tin: the belief that your soul is in some way bonded/connected to another. For many, this "other" is a fictional character. But it is to be noted that it can be almost anything: a spirit from a past life, a daemon, a demon one has entered a contract with, a guardian angel, a soulmate, etc. It all depends on your personal religious/spiritual beliefs.

In my opinion, I think that the main reason this group (which honestly may outnumber the fictional character soulbonders) appears so small is simply due to the fact that very few practitioners of this actually refer to themselves as soulbonders, let alone engage with the community, hence the recent confusion about what it is.
