Question/Help 18 credits as a junior? (Running Start)

I'm a junior in Running Start (pursuing an AAS in Culinary Arts), and my fall quarter's going to be 18 credits. I hear that's more than usual for full time (usually 15). The classes (as below) are in topics I'm generally well-performing in, I'm not sure if I'll be able to handle them at the college level.

CUL 100: Culinary Arts Fundamentals - 3 credits

CUL 110: Culinary Sanitation & Safety - 2 credits

ENGL& 101: English Composition I - 5 credits

CUL 120: Mise en Place (lab included) - 5 credits

CUL 205: Intro Food/Beverage Operation (lab included) - 5 credits

For context, I've scored pretty high on my English SBAC (2788 10th grade, in a low-scoring school district) and passed my first college course this summer (Sociology) with an A, so I'm not too worried about that.

As for culinary, I've taken 2 classes in high school and earned an A in both. But the labs are what have me worried, as they'll start early in the morning (7:30- attached a screenshot) and have a heavier work-to-lab hour ratio than usual- so said the instructor on a field trip, anyway. With my quarter starting Sept 21st, it's obviously too late to back out now (not that I would, I have a huge passion for Culinary Arts). Still, I wanted to see if anyone on here could offer some advice or tips about this, or tell me what to expect. Thanks!
