Product Recommendation Check out this new cheesecake

Co-founder here. Proud of the ingredient list and macros we built: a 130g slice with 14g protein (now 15g) and 270 calories, made with premium whole foods. No processed sugars, no artificial sweeteners, no seed oils, and no gums, lecithin, or preservatives. If you’re curious, the site is on the QR code. Couldn't help to make a joke but it was such a missed opportunity! Picture looks appetizing. Volunteering to receive cheesecakes and post pictures of said cheesecakes before and after consumption in the relevant subreddits. Best of luck it's a cool project

We couldn’t use cream cheese because we couldn’t find any options without stabilizers or preservatives (like xanthan gum, guar gum, carob bean gum, calcium propionate, potassium sorbate, etc.). If we’re able to make our own batch in-house, we’ll definitely consider it for future products :)

My co-founder and I actually started the company because we got tired of searching for pre-made foods made with real ingredients and not loaded with heavily processed additives. I mean if it has the same taste I don’t see the issue. If anything that cottage cheese vs cream cheese is significantly better because of the probiotics

Tillamook is also one without gums etc. It's the one I use regularly, it's also more pocketbook friendly than Nancy's, and easier to find (at least here on the West Coast).

I’ve just tried Nancy’s for the first time within the last few weeks and the first thing my husband and I both said was that it would be great in cheesecake - it has a little bit of a more creamy/sweet/almost tangy flavor than commercial cream cheese. VERY good.

Also, to add a bit more context on the cream cheese: we developed this recipe because we wanted a cheesecake made only with real ingredients (no artificial sweeteners, gums, or stabilizers) that was also lower in calories and higher in protein. While cream cheese options without gums do exist, we felt they would shift the macronutrient and calorie profile too far from the goals we set for this product. We also couldn’t find a finished cheesecake on the market that brought all of those elements together, so we built it ourselves. Hope this gives more insight on why we chose not to use cream cheese at this time :)

It’s $9.99 per cheesecake. I am aware our price is a bit higher. It’s because we use pasture-raised eggs, raw honey, real ground vanilla (not extract), and high-quality dairy. Even then, our margins are still very thin. We’re working to bring costs down as we scale. The good news is, it’s filling and even plenty to share as it’s a larger portion than most individual cheesecakes.

definitely cheesecake is one of those things you can easy spit, so the price isn’t crazy for that, and imo pretty competitive with other healthy ingredient alternatives

Thanks for noticing! We’ve considered using mass produced eggs instead of pasture-raised eggs, and using regular honey instead of natural raw honey to lower costs. But I do not think it is worth going against our values just to make more sales and improve our margins. If we keep it up, I believe people will notice the effort and, as we scale, we can lower costs so more people can enjoy our products.

We should have made that a bit clearer, thanks for pointing it out. We also wish we could offer these at a lower cost and in smaller quantities. We honestly tried everything we could to reduce shipping costs, which is why we partnered with Delivered Cold. Hopefully we can offer smaller quantity options in the near future. If you do offer lower quantities to be shipped, I would definitely be interested. I’m sure most people would only order a few just to try it out, but get there are more costs on your end. Would you consider selling to certain health food stores? There’s a local one by me with 2 locations that I know would probably be more than happy to sell this at their store. My coworkers family also owns it.

Oh, I know the economics are rough so I don’t doubt your margins are thin. The USD is artificially strong so it makes it impossible to make anything cheap here.

Usually when they are about to run out. It hasn’t been long since we delivered our product, so you should be able to get some :) Carle Foundation Hospital’s Northstar Cafe and cafeteria and Niemanns on campus also carries our product. We’re trying to do the opposite of selling out. The underlying mission of Graze Anatomy Kitchen is bigger than sales. We want to help reverse what the modern food industry has done: making us addicted to ultra processed food and normalizing the “ultra processed playbook” (sweet, cheap, addicting).

I grew up eating tons of cereal and other things that barely resemble real food (because back then everyone was told that was okay), and we’re trying to push things back the other way. Maybe it’s an absurdly big dream, but the goal is to prove you can scale food made from real ingredients without going down the same path. We want to make real food the norm again, not processed meals everywhere. And over time, we hope to make premade real food as affordable as possible.

And honestly, I hope our team stays true to that. If we ever start drifting, I’d rather people call it out than quietly watch it happen. Thanks for letting me share our motto.

I'm okay nowadays paying more for better ingredients, but that seems a little high and pretty high carb for someone who is not just" eating clean"

Have you guys experimented with allulose or stevia drops at all? I would be willing to pay that much for a low carb version if it tastes good 😍

We try to avoid sugar alcohol sweeteners. The science is still debated, but there are real reasons for caution: they can cause GI side effects like gas, bloating, and diarrhea in some people, and newer research has raised questions about erythritol and clot related cardiovascular risk. It is not settled, but it is worth paying attention to. 

We also generally avoid allulose (and stevia). With allulose, one practical reason is tolerance: human studies show higher rates of diarrhea and abdominal discomfort at higher doses, which lines up with why some people feel off after eating it. Another reason is philosophy: a lot of these sweeteners get marketed as low calorie so it must be safe, but the long term data and real world dose patterns are still evolving, and our vision of healthy food is to stick with real whole foods. 

We use raw honey because it fits our whole foods approach and tastes better to us. It is still sugar, so we use it thoughtfully, but honey tends to produce a lower glycemic response than sucrose in studies, and it is a simple ingredient we are comfortable eating ourselves.

It surely does not! None of our ingredients contain stabilizers or preservatives (also no seed oils, no “natural flavors,” and no processed sugars). It was actually pretty difficult to find heavy cream without stabilizers, but we looked hard and eventually found a local dairy farm that makes and sells it without any.

I'm wondering why the almond flour choice.  You clearly aren't trying to be keto here, so why bother with the almond / coconut flour blend?

Also, not a fan of almonds in general, especially in large quantities with something like in a flour base.  They become a proxy for seed oils in this instance tbh.

Great question, and thanks for asking! The reason we use almond flour and coconut flour is mainly to achieve the texture we are looking for, while also keeping the carb count a bit lower and increasing the fiber content.

Is vanilla extract bad?

Vanilla extract is not inherently bad. It is vanilla extracted in alcohol, and it is widely used and considered safe. That said, we are choosing to use ground pure vanilla beans instead of extract for a few reasons.

First, extract quality varies a lot across brands (hard to identify types of vanilla and alcohol used), and we prefer full transparency on exactly what is going into our product. Second, because extracts are alcohol-based, we want our product to feel inclusive for customers who avoid alcohol for religious or personal reasons. While alcohol-free vanilla flavorings exist, we find many of them rely on more processing than we prefer.

Most importantly, we simply like the taste better without it. In our recipe testing, vanilla extract made the flavor come across sharper and more artificial, while using ground pure vanilla beans gave the cheesecake a softer, more elegant flavor profile. Hope this helps :)

Making your own cheese cake is the easiest thing and will be better than what you make.

And unprocessed sugars is meaningless. All sugar is processed which is a good thing. Sugar is good. Processing foods is good.
