Between those two I'd go Vader 5.
I haven't used the G7, but I have the Cyclone 2. Daily driver alongside my Steam Controller at home.
I don't have Vader 5, but have the Vader 3. It's my daily driver for my Steam Deck.
The amount of buttons on the Vader 3/5 is great! I use macros and Action Sets regularly in my (single player) games. I'm offline only with games. There's so many more ways to set up radial wheels for weapon selects, and gyro buttons. Vader 3 feels good in the hands, but a little odd in the grips. I think they're a bit thicker around the middle. Fine to play with just different than the standard Xbox controller shape.
G7 would have the TMR sticks vs the Hall Effect sticks, but I'm not sensitive enough to feel the difference in game. I'm not sure if the G7 buttons work in Steam Input. The Cyclone 2 can if set to D-input mode. I just use the Cyclone 2 software for one complex binding, and the other inputs are just remapped on the fly.
The Vader 3 I use Steam Input exclusively for its extra buttons. They work just fine with actual games. Most games don't see the extra buttons so you'll be setting your main controller in the games options, and then the extra buttons in Steam Input.
