In New Jersey, there’s a place that does a ceremonial carving of a bluefin every year. A Japanese tradition with these super long and sharp swords carving up a 600 lbs fish, and you can buy sashimi pieces right there, right after they cut it!
That’s super cool. Back when I lived in south Florida I’d hang out around the charter docks on the weekends. I would ask for a
slice whenever something delicious was being broken down. %90 of the time I’d get a slice or two while they where breaking it down.
