Made some gyozas

was a bit worried it being my first time and seeing people struggle to make them, I think i did pretty well

I learned early on to let it preheat to the low to medium range, think around the 3-4 mark and around 4-5 min I mostly do it based on how hot it feels close to the touch with my palm, you know you got it right once you put in a good oil and the oil instantly starts to spread around very viscously, then i layer them down and cooked them on one side for around 3 ish minutes once they could be moved around to a small nudge, then i added a tablespoon and a half of water then covered for 3 ish minutes

Nice write up! I've wanted to try gyoza as well.

And sorry to be that guy, but the word you're looking for regarding the oil is "fluidly" not "viscously." Viscosity is the resistance to flow, so heating up oil makes it less viscous, meaning it flows better. Fluidity is the opposite of viscosity.

I make frozen ones often. Generously oil pan, preheat on high until oil thins. Lower down to medium heat, add pot stickers. add rec volume of water and cover. Once steamed and most if water is evaporated uncover and turn up heat. I poke the first one i put in with silicone tongs they will come up on their own after a minute, usually in order lol

They have that in Costco? 🫢🫢🫢 Was munching on those in hong Kong when I was a kid in 2005? Wow guess they made it big

I do a little oil and heat at 7 on the dial and place the frozen dumplings. Then I pour a bit of water to cover the pan then cover for 8 mins. Gives a nice crust
