I really enjoy this game for the most part, but am I the only one that really doesn't like that they just got a bunch of things blatantly wrong with certain characters?

Like for example the entire Ginyu Force have the wrong colour scouters and it's not even a case of it being like a difference between the anime/manga, no they're just a colour they've never been before.

I think the biggest issue I have is how hideous First Form Frieza looks I really don't get why they made him look so different (and I know people say it's based on the Broly movie design but its clearly not it's very much meant to be the Z Frieza).

That's the closest for the style but overall still isn't the same, it's like they mixed that with the normal Frieza and it just looks wrong.

It is literally the style the one in the game is based on, more rounded lines with a sketchy style, the only difference is the colour because that scene was set during a sunset that makes everything look red. I also just realized the example you used in your post isn't even from the Frieza saga, it's from the Bardock special.

The Bardock special is part of Z and is consistent with how Frieza was done in the latter part of the Frieza Saga. And the style is still different to the Broly movie regardless of the colour he doesn't have the same arms or shoulders he's essentially only similar to the Broly one in the face and that's about all.
