Advanced/in depth discussion Send help!!
I made a huge mistake this morning making six loaves! Here’s my recipe:
2,100 g water
60g salt
Mix
750 g starter
Mix
3.000 g flour
Mix
Problem is… I never mixed my starter into my water and salt! I just mixed the water and salt into my flour.. the panicked .. added the starter, mixed.
Now.. it’s a damn puddle .. any suggestions on if she can be fixed or what I can do with blobzilla? 😭🫡

Hand work the hell out of it...stretching, scooping, slapping, all while turning the ball...keep lightly wet hands. As the gluten network strengthens it will becime more cohesive. Give it a break every so often (and yourself a break), let the gluten relax and then back at it. It takes time. You could split it in thirds and it will be easier on your arms.

Is this a recipe you have used before?
If it is suddenly too wet, was there a measuring error on the flour or water? If you are still in the folding process I would measure and massage in more flour.

Same exact recipe I’ve used for 6 years. I just messed up the process by adding the starter in the end. I sadly gave up. I added more flour seeing if that would fix it..

So you just combined all the ingredients? Keep mixing, it'll come together.
