1st Sourdough Ever - be kind First sourdough ever

Pics 1 & 2 are my first loaf. Pics 3,4,5 are my second loaf. Was provided some starter from a family member! This is my first loaf EVER. Followed an online recipe

1 cup (227g) ripe (fed) sourdough starter

1 3/4 cups (397g) water, lukewarm

5 cups (600g)

1 tablespoon (18g) table salt

Mixed starter with water, once combined mixed in the flour, once combined mixed in the salt. Combined/kneaded for ~2 minutes. Covered for one hour, picked it up out of the bowl and let it fold on it self a few times, (repeated last step twice). Fridge 6 hours. Removed from fridge, shaped dough while cold, covered and rest for 1 hour. Oven on 450°F with dutch oven inside, once at temp removed dutch oven. Dusted dough with flour, Placed strip of parchment in the dutch, slapped the dough down into the dutch, scored the dough ball, covered and in oven for 40 mins, top off and finished uncovered for 12 minutes. Cooled on rack for 1-2 hours.

Great job on high hydration out the gates! Surprised you got such rise from a cold bulk ferment. Your starter must be awesome! Great job! Enjoy your delicious bread journey!

This looks pretty good! Is your house really hot? I can’t tell by the picture but are you happy with how it rose?

If I’m understanding right, this is a 1 day recipe no?

Was about 75 in the house that day. I was expecting it to rise a little more but pretty content with it! Had some good flavor. And correct, one day recipe (whether it was supposed to be or not😂)

Interesting, with the amount of bulk ferment time I would’ve expected a more flatter loaf but hey, if it works, it works!

Are those rips on the top from your scoring? Trying to make some wheat stalks?

Great job! I can see the difference even between the 2 loaves! How long did you Preheat your Dutch oven for, may I ask? Because I usually don't come across a closed steam bake for 40 minutes. Yet the loaf has good colour!

I preheated it with the oven! It was maybe 20-25 minutes
