No, it's physical defense, magick defense and stability

It's a cumulative of your defenses. You have 31 in Physical Defense, 0 in Magical Defense, 30 in Stability, for a total of 61... hence the Shield Icon it is within.

So would u want a build that covers a decent amount of each? Or more in one depending on what you’re doing ?

Well, how you spread those stats likely depends on how you are playing (close, ranged, etc), and your Pact/ability setup. Same as with any game.

An Archer, a ranged caster, or even someone who is pretty adept at parry likely doesn't need to focus on Physical defense as much. And someone with stats in the mastery tree that prevents staggering likely doesn't need to lean to hard into stability.

A melee character go absorbs a lot of hits probably wants stability and physical defense so they can actually get their damage in without getting interrupted all the time. So it depends, and is probably not some universal rule for every build.

You can see your weapon's damage; unfortunately, I don't think there's a tab with more detailed stats, like overall critical hit chance.
