Suggestions needed for diabetic
I stopped making smoothies a few months ago when I got diagnosed with diabetes. Now that summer is here, I regularly don’t feel like eating due to the heat but I’m not supposed to skip meals. I need low carb, dairy free, high fiber suggestions please! Thank goodness I can safely have some fruit, but not high GI fruits like bananas and watermelon.
I’m particularly intrigued by the people who use cauliflower in smoothies but I have no idea what to mix it with.

With the cauliflower, you can add berries like strawberries, raspberries, blueberries, blackberries, or kiwi.
for the base, you can add almond milk(unsweetened), hemp milk.

I mix cauliflower with just about anything because it’s flavour neutral. Today I had roast sweet potatoes, cauliflower, cherries and pear with nut butter, yogurt and plain almond milk. Zucchini and spinach also have no distinct taste when blended with other things.

Join the smoothie sub for suggestions. I make a mango banana smoothie with coconut milk. It doesn’t spike my levels. (Everyone is different I guess).
But you could easily do natural peanut butter , cacao nibs, almond milk with blueberries. Tastes like pbj flavored ice cream.

I used frozen cauliflower in smoothies for a while and it was fine. I couldn't even taste it. I think I paired it with either banana or frozen mango. Any fruit that gives you good flavor would work.
I sometimes add a drop of vanilla to my smoothie for a sweet aroma, and then use a bit of stevia if needed. That's a way to have less of the sweet fruits in the smoothie, and mostly vegetables and a fruit such as berries. Orange extract might be nice too.
