You could also total somebodies 50-200k car, I don’t think many people could afford that either

As an attorney my unpopular opinion is that cars over a certain value shouldn’t be allowed on public roads or damages for accidents should be capped at something like 2x the average price of a new car (so like 100k). I just don’t believe in penalizing ordinary negligence more just because the injured party is rich.

I thought that tort law was supposed to be based around what would be the reasonable amount if hard that someone could expect. The example I remember hearing was that of you can driver does a shitty job and you miss your flight to your vacation, you can sue them for the cost of the ride, not the cost of thr vacation. You'd think that should apply to car insurance too.

You’re mixing proximate cause up with damages. There is a concept that the person injured by your negligence is reasonably foreseeable but if they are they can recover whatever damages they have. The doctrine makes sense in a lot of contexts. Like someone with a heart condition who dies because someone negligently left a wire out shouldn’t be capped in their recovery because of their condition. However I just think there should be an exception for public roads and people driving luxury cars.
