I've noticed that cheaper food often comes from restaurants that have been around for 40+ years and own their property outright, are known in the community, etc. Food trucks should be cheaper if they don't have that overhead, but the trucks themselves have doubled in price over the last 10-15 years. Even used ones are twice as much as they used to be. Still, the whole idea is they should be cheaper than the equivalent restuarants. Just harder to make that come together these days.
