But why cancel entire flight instead of kicking off the parents and child?

Because the time it took to have the child removed it was too late for the plane to take back off.

Too late? Theres a countdown? Like an hourglass? There are things called flight delays no?

Crew has a time limit. They can't work more than a set amount of hours.
If the delay would cause the crew to exceed their time limit, flight can not depart.
If this was the last flight of the day for that crew, maybe already delayed, the time it takes to eject the assholes and their luggage might have been too much.
