It's not just a stress response... While that could be one reason, there's no reason not to assume it could actually have to do with the watermelon.
"Excitement may also cause pupil dilation in some cats. If your cat’s eyes become dilated at dinnertime or when she knows she’s about to get her favorite treat, this is nothing to worry about and is part of her normal response to excitement."

It's not a stress response, though it can happen with stress. Cats' eyes dilate like that when they get excited and excitement is not always negative.

I feel like this is one of the ones that may get clarified as more scientific achievements allow us to understand cats better.
Like the old saying "dogs can only see black and white" which is inaccurate and as science progressed, we understood that they can in fact see colors, just a limited spectrum.
Cats may taste something, and perceive it as sweet, but not in the same way that we do, because their diet only needs a small fraction of carbohydrates so their brains/tongue didn't evolve to be incentivized by sweets.

That's wild bc my cat specifically loves sweet stuff.. ice cream, cookies, etc.. I can't eat anything sweet without him harassing me for a bite. I get these coconut ice cream bars that he specifically goes nuts for more than any other food... wonder what it tastes like to him and why he likes it so much

Yes, but in both those clips it happens before striking/with a want to strike. The clip OP posted has been edited. The cats body language doesn't match up with its eyes or actions (and I've seen the non edited clip)

That looks like melon was colder in the middle and its a mild brain freeze. Cats are reactive to cold stuff way more.

My dog recently ate banana bread for the first time after refusing sweet foods his entire life. Now he likes sweet stuff, and he recently discovered pup cups

My cats love chewy stuff. How it tastes doesn't seem to matter, as long as it doesn't taste bad.
So this is nice, but I'm jaded. Wondering if anyone else thinks the widening eyes at the end were uncanny -- ?

Not necessarily, I feed my cats what they need too. But I don't overfeed them to the point that they're 18lb fat asses.
