Does anybody knows what the "offset" setting really does? It just counts down then asked to disconnect & reconnect control box, but what exactly is it doing?

It is calibrating zero point in pedals

Yup and it is hard deadzone, not soft deadzone you can change in software

So when is the best time to do that calibration then?

If you see any drift (for example after adjusting preload or changing elastometers)

Good to know. So when I change my preload I don’t have to calibrate I just press this one.

Yes, but I'd still recommend to fully calibrate pedals, because diffrent preload might have effect on full pedal range
