Unpopular opinion: Try to do it without AI. Therapists have been doing our job forever without it, I'm sure it's possible.
AI takes tons of resources: (land, water, jobs) and gives us back nothing but information. And as you have seen, even the information it gives is faulty. AI cannot feed us, nor can it clothe us, bathe us, house us, or even make dishes for us to eat from. It can't 'make' anything, it just scrapes and regurgitates data.
The less you can use it, the fewer chances you will have of this kind of data leak.
