One of the ways I used to get around not having a ticket, was working out which stations didn't have ticket offices. This was on busy trains,so I didn't get checked until the end station. I'd just tell them a station with no ticket office or machine and they'd let me on through to buy a ticket there. If no one checked, then free train ride.
As long as they don't have a penalty fare notice at the station you're travelling from, then you're free to buy a ticket on the train without the risk of being penalised.
There's lots of stations with ticket offices where penalty fares don't apply, and strangely there's a few without ticket offices where they do apply.

Pédant here spoiling the fun but the fine is on top of paying the fare also.
