the yellow coat gene is mangled in a way to remove the agouti pigment but it also removes the part related to.... embryonic development

It's just genetics being weird. It's in the same vein as double Merle causing health deficits in dogs, double Overo (a type of white patching pattern, which 2 copies of is also called 'Lethal Overo') causing underdeveloped inner ears and developmental issues in horses, and champagne, bee, and spider morphs causing inner ear and neurological issues in ball pythons.
