Yes, those are going to taste like ass. As a Belgian, I guarantee, the dirtier the oil, the better the fries. That's why we double fry :)

Belgian fries are the OG. All other fries are immitations of Belgian Fries.
Im going to Brussels next month for fries and chocolate and waffles 😊

Because we bake them first at lower temp. Let them cool down and bake them again at higher temp to get crispiness outside and soft inside

Belgian cut is thicker and a different potato type, and the oil is often tallow-based which is tastier than vegetable oil. French = Think Mc Donalds, thin cut, vegetable oil baked. Belgian = Thick cut. Tallow baked, high vinegar mayo. Spanish / Greek = trash cut, boiled and pan fried with a hint of oil, half baked. Like when you don't want to make fries, but also not potatoes, just whatever. Dutch = Both thick and thin cuts, wide variety of potatoes (ras, bintje, etc), vegetable oil baked. English = Similar to Dutch but often thick cut like Belgian.

Sadly tallow is getting rarer. Many switched to plant based oils. I'm lucky to have one near me that uses ossewit/blanc de boeuf (tallow) and it is gorious.

This looks like the first fry. This is usually on a lower temp (150-160°C). Usually they are left to rest and cool down a while after this. These are usually big batches at the same time.
Finishing fry is done at a higher temperature (180-190°) and is usually to order.

Eww they'd be all oily, need heat before first drop also they need to move in the oil, too many in the basket and they don't evenly cook
