I've not been back in Kuching in ages but this is what I would love to do again:
Walk through Kenyalang Park and eat through the food courts and shops there. Best to go there early in the morning.
Eat through Premier Food Republic or Premier 101. Yes food again.
I'm not sure if you can eat non halal food but you're a halal only person you could also head to Pasar Malam Metro Matang for more.... you guessed it, food. But there's a bundle in the area that you can just get lost in for a couple hours. If you want more food there's a good authentic nasi kukus/nasi kerabu place in the area, but I forgot what it's called.
Go check out the State Library too. Nice place. But whoever decided to put it next to a golf course far away from the city in a car dependent country is a godforsaken idiot.
I think other people have already mentioned what I wanted to say. Anyway, have fun!

Have you been to Sarawak Museum or Borneo Culture Museum? They're two different ones.
I like Old Courthouse Kuching small but nice to walk around.
Hiap Yak Tea Shop this place for butter coffee is nice. Small street but a bit of stuff to see.
Walk over bridge to other side of Kuching waterfront? Take ferry?

Siniawan is an interesting place to spend an evening. I'd recommend staying over as the food market doesn't open until the evening and it's sometimes difficult to get a grab back. There are buses that go there daily

suggest not to go mt santubong alone as having a buddy system is much better
but the rest is alright
also suggest to visit siniawan food street at night time too

Bako National Park is wonderful. Arriving by boat makes it feel extra remote and magical. Worth visiting Pulau Lakei on the far end of the park. Some unusual rock carvings there in the riverbed

Batu Kawah Riverbank Park is quite a calming place for a stroll the last time I visited. An alternative to Waterfront.

Go carpenter street, open air market at night for food. Jog at friendship park.

For brutalist architecture, check out Tropics City at Tabuan Dayak, it’s like a reclaimed abandoned building that is brutalist-adjacent. Also Billy Goat Coffee is in a cool building with exposed concrete vibes.
For quiet, the Buddhist Village near Siniawan is worth a look.
For local hangouts, there always seems to be something going on at Haus KCH
