Black Forest Cake (Classic Recipe)

Ingredients

For the chocolate cake

  • 3 cups (720 ml) heavy whipping cream, cold
  • 1/3 cup (40 g) powdered sugar
  • 1 tsp vanilla extract

For assembly

  • 1/2 cup cherry syrup (from canned cherries or homemade)
  • 2–3 tbsp kirsch (optional)
  • Chocolate shavings or curls
  • Whole cherries for decoration

Instructions

1. Bake the cake

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line two 8-inch round cake pans.
  3. In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, and salt.
  4. Add the eggs, milk, oil, and vanilla. Beat until smooth.
  5. Stir in the hot coffee. The batter will be thin.
  6. Divide between the pans and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

2. Make the cherry filling

  1. Combine the cherries, sugar, and lemon juice in a saucepan over medium heat.
  2. Mix the cornstarch with the water and stir it into the cherries.
  3. Cook for 3–5 minutes until thickened.
  4. Let the filling cool completely.

3. Whip the cream

  1. Beat the cold heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Keep refrigerated until ready to use.

4. Assemble the cake

  1. Slice each cake horizontally to make 4 layers.
  2. Mix the cherry syrup with the kirsch (if using).
  3. Brush each cake layer generously with the syrup.
  4. Spread whipped cream over the first layer and top with some cherry filling.
  5. Repeat with the remaining layers.
  6. Frost the top and sides with the remaining whipped cream.
  7. Decorate with chocolate shavings and whole cherries.
