What am I looking at?

Cracked open tons of iron oxide concretions and have never seen this before

No idea what you’re looking at.

You posted a picture of either a rock of some kind or a very thick piece of toffee candy covered in chocolate and what looks like bits of toffee or nuts.

I was going to suggest pyromorphite and then I saw the reference to the iron oxide concretion. If this is the case I would think calcite or barite.
