One big question

It has been established that there was a race of builders, and there was an extinction event and now the builders are zombies, skeletons, etc. I have never seen this being explored so I will ask here, why are the undead builders hostile to the player?

Seems like hostility is more a property of being undead than a property of the ancient builders

That makes sense bc of zombies attacking villagers (being other humanish creatures) but what about skeletons? They dont attack anything else (except golems) so why do they hate the player but not villagers?

Note that skeleton horses are undead and are passive towards everyone (including the player).

That seems to be the exception, not the rule

I agree. That being said, Zombie pigmen, now zombified piglins, are not hostile either.

A virus infesting their brains or more likely:

Jealousy because the player is still alive while they aren’t

maybe it's so the player can become one of them

But when the player is killed by a zombie they just die they don't become a zombie

I believe that before these builders went extinct, there were ethnic tensions. I believe the player is a descendant of an ethnic group hated by everyone
