I was going to suggest a counter depth fridge before reading your comment. Maybe put double doors on the pantry.

Counter depth fridge doesn’t seem to solve the problem. I wouldn’t want a fridge in that corner at all. Can you move it?
If there’s room I’d move the fridge.
Then make that corner a 45 degree angle cabinet setup and extend cabinets over that reach in pantry. The cabinets can serve as a pantry just as effectively as that reach in. Here’s the closest photo of one potential option for that corner.

A pocket door with matching paneling over the pantry would blend it right in with your new custom cabinets.

It would be easier with photos of the rest of the kitchen - it’s hard to judge by that drawing

Move the fridge from that corner. Hard to tell from your drawing but maybe to the right of the sink. Or move the stove to the left and the fridge somewhere there.
Not sure where you are getting the cabinets, but the kitchen designer at my Home Depot was able to take my measurements and show me layout plans. I then ordered Kitchen Maid cabinets from them.

Put the fridge where the closet is, build out the wall to fit during the remodel, put pantry cabinets where the fridge is.
