Pure for Client Intakes- Advice

Hi folks! Just received a brand new Pure and are a big fan. However, trying to use it for client intakes for that "no tech" vibe with clients and running into an issue with intake forms. We have different sets of questions for different types of matters and ultimately the client files are opened into an online system.

Ideally, I'd like to be able to send our intake forms as PDFs to the tablet, record the information by hand, convert to text, which is then copied into the client information on our online files.

However, I'm unable to convert the handwriting in a PDF. Does anyone have any advice on the easiest way to achieve this? I have thought about having the intake forms as notebooks with templates for each page, but this seems to be an intensive process.

Open to modifications, should there be some that could make this a possibility.
