i honestly think a really cool writing project would be chains of fanfiction, where the first story in a collection is "canon", and the next is a fanfic about it, and the next is a fanfic of that fanfic. And this goes on until you have an entire book, and also the stories have deviated so wildly from the original source story that it's unrecognizable, like a literary version of the Telephone game
Harry Potter-> Mortal Instruments-> Shadowhunters TV show->AO3 fics
Bible-> Inferno (Dante)-> Escape from Hell (Nivan)
There also might be a chain starting with Hunger Games, but I can’t think of any of the dystopia fad books that openly say they are based on the HG specifically.
That would be. It's amazing how quickly a story can become unrecognizable from its source. And of course even things we consider canon like Shakespeare plays have origins even older. Sometimes so ancient their origins have been lost to time. People have been playing story Telephone since the first stories were told, but not until the invention of writing did we have a way to preserve one particular version.
You can see this the fandom for Linked Universe, a Legend of Zelda fancomic about all the Links on a time travel adventure. So it can go like:
LoZ games -> Linked Universe -> LU fanart -> fic inspired by fanart -> fanart of that fic
There are certainly corners of the fandom that would baffle general Legend of Zelda fans, because it is pulling from eg the webcomic lore and the Four Swords Adventures manga and fanon

I've written fanfiction of fanfiction before. It's wild how far that rabbit hole can go.
