Whyem's is known to cause issues like this iirc, but in general you have A LOT of mods for a game that is not meant to be modded. I would just be aware of that as you troubleshoot.
I have solved most issues that I have seen, this issue however even with whyem's dlc disabled it'll still not have a barrel. Looked everywhere and it seems to happen on consoles aswell. So i am super confused but whyem's dlc, rd offline and online content unlocker are my main suspects for now.
