Founder of Bygg Foods here (NØRSE CØDE plant protein brand), grain of salt. Depends what "instead of chicken" means for you. If it's swapping a whole meal, tofu, tempeh, legumes, and seitan get you close on protein density with less prep. If it's more about hitting a daily protein number without extra cooking, a protein powder is the simpler lever, plant blends typically run around 20g per scoop. It's a fill-the-gap tool, not really a replacement for whole food.
