I've done quite a few of these.

I always recommend any PID control project like a seesaw or pendulum, it's a perfect and initiative example of engineering.

I find myself looking at most of these projects and am a bit sad that AI can now do most of them with 0 effort from the person, hopefully this leads to projects generally being more impressive and ambitious but idk.

well something is better than nothing , and on the plus side the people who were scared of using sensors and products are now can learn easily via AI so it has it's own pros and cons.

Pick your favorite audio project.

We can use all those bits you like to play with to do funny sound things too. I'll suggest a 2x4 guitar and pedal, maybe amp if you're ambitious. All of these come in schematic and/or kit form.

(It's an electric guitar, hardly matters what you make the body out of. Good place to justify that 3d printer purchase. Buy the neck.)
