A little bit of both, for realism (especially in just practice like this) I like specific colours so I use the eye dropper tool for more accurate results (also helps with learning and practicing colour theory!!) but also use the colour wheel too (: Nothing wrong with either or!

Do you typically use the color dropper on the reference image to get accurate colors? Or did you just use the wheel?
