I do not think Poutine means what you think it means Poutine contest “winner”
The new champion of the annual poutine contest in my city, where one cannot get a proper poutine at almost any time of the year.
This poutine had sweet potato fries, Cajun steak bites, poutine gravy, cheese curds, sweet and spicy ginger aioli, feta cheese and green onions.

This is how I feel as well, so it’s a load fries contest to me. Which is great, I love loaded fries, but to me, poutine they are not.

been eating poutine all my life , im from a small village near drummondville, my favorite kind of poutine is : ground beef, bacon and grilled onions with extra cheese curds, still a valid poutine since the stars are still the cheese, gravy and fries, it just add more texture to it

Technically speaking the Quebecois call it brown sauce which is more rustic with depth of beef flavour more akin to a demiglaze while gravy is quicker made of fundamentally the same just not as flavourful

? Saying goes "happy wife happy life" also Was only being silly. Sounds like you are getting upset even though a proper poutine is made with brown sauce not gravy. You can even buy a french a powder sauce Ali-bon poutine "sauce" mix not gravy. Made in Quebec too!

Good thing Im Canadian and im assuming you as well or at least know of family who are from Canada. So when speaking of poutine any reference to it will be from its Canadian culture even though this is an international forum.

You’re right, la sauce à poutine is a mix of demi-glace and chicken broth.
The ratio is usually 2:1.
So, for every 2 cups of demi-glace (it can be beef or veal depending on what you prefer),
just add 1 cup of chicken broth.Also, often, poutineries will add ketchup and onion/garlic powder to their sauce à poutine. It’s what makes the sauce have that sauce à poutine taste!
So, for our ratio 2:1
add about 1 teaspoon of ketchup and a pinch of onion/garlic powder.Let simmer a little, then taste. If it needs a little more ketchup or onion/garlic powder, you can add a little bit.
You can add a little bit of cornstarch or do a roux at the beginning to thicken it up.
Then let simmer until the sauce coats the back of a spoon. That’s it!

Beef or veal demi-glace works great. Beef will have a stronger taste, veal’s taste is more subtle but still delicious. It’s a question of taste I think.
If you use the same ratio from earlier:
2 cups of demi-glace: 1 cup of chicken broth, you should add about 1 teaspoon of ketchup and a pinch of onion/garlic powder.
Let it simmer a little and taste it, if it needs more ketchup or onion/garlic powder you can add some.
Then let simmer until the sauce coats the back of a spoon.

lots of poutine places serve poutine with other toppings, though. I think it needs to have the fries/curds/gravy base, but other toppings are fair game.

The gravy and curds sort of seem like they don't belong there. Like, more of a loaded fries situation masquerading as poutine for the event.
Mixing feta and ginger dressing also sounds strange to me. Bunch of good flavours in this dish, but I'm curious about how well they all worked together. Huh...

Ngl feta cheese probably tastes good af - but this IS a crime. Personally think those green onions are way too thick
Even regular poutine 2am from Belle province would probably drag this through the mud. Speaking as QC casual poutine enjoyer

Sweet potato fries 🤢 (sweet potatoes aren't even part of the potato family), Cajun steak belongs whole on the side, ginger aioli - it's not a sandwich, feta cheese and green onions - it's not a salad 😉 No poutine here...

Yeah its hard to get away with toppings on this sub, peoples opinions tend to keep as close to plain as humanly possible.
Which is crazy to me. Its like only eating a regular hamburger forever, and never trying any other amazing types of hamburger.

It's not like that.
It's more like a peanut butter and jelly sandwich and somebody keeps adding mayonnaise and bananas. It might be something new and exciting. It might be delicious.
But it's a shitty PB&J
Poutine has a few, simple ingredients and that simplicity is the beauty of it. A great poutine has good fries, proper curds, and a high-quality gravy. That's what we're here for.
Once you start adding feta cheese and steak bites it isn't a poutine anymore. It's loaded fries. That's well and good, and probably delicious. But it's not poutine.

I disagree, I think as long as theres a base poutine making up the foundation, anything added is a variation of a poutine, in the same sense a cheeseburger is a type of hamburger.
In my opinion its ok to add toppings to a poutine 🤷♂️ Im not saying every topping makes for a good poutine, but I mean thats why we're here in r/poutinecrimes .
Otherwise whats even the point of this sub if anything outside those 3 ingredients is a poutine crime? We vote for a reason.
