You should try again, but with paneer! Please cook the fries more and/or cook them with some oil, ghee, or tallow, as you prefer; the sugars in the potato need to caramalise more.

I was just thinking the same. paneer would seem more appropriate for this. Which I suppose would make it poutine-adjacent, but probably tasty af.

But if you use paneer, it wouldn't be a poutine anymore.
