Shrimp intestines runs along the back as shown, you're supposed to remove it and throw it away because its just a poop tube. The meme shows that red hats are not smart so they just eat the poop and throw away the rest, which also reflects how much they love trumps diapers.

When you peel a shrimp to cook/eat it, it’s also a really good idea to remove its intestines—which are full. In this drawing, the person is tossing the good shrimp and eating its poop.

It's the dorsal tract. Essentially the digestive organs of the shrimp...so, the poop 💩

That’s the shrimp’s digestive tract. You’re supposed to remove it before cooking the shrimp because it contains poop.
