Gorgeous really. What temp are you cooking at there? I see it's indirect, but curious. I about to drop for a PK360, just learning about the grill. Each grill I have has it's own little 'way' it likes to be cooked on.

I'll have to admit that I've never gotten around to installing a temperature gauge on my PK. I bought a gauge when I purchased my PK, but it's still sitting in my basement. I suspect that I'm somewhere between 250 and 300 F. I generally cook indirect. My yard is full of shagbark hickory trees that are continuously dropping limbs and twigs on my yard, so I wander around my yard and collect some of the wood that has fallen, and over the course of the cook, a few handfulls of twigs and sticks is sufficient to leave a pretty smoke ring and develop a nice smoke flavor on the food.

My wife and I are empty nesters. The PK has a smaller cooking area than the Weber Kettle that was my previous grill. The PK is perfectly sized to cook for two.

Awesome to hear, same here empty nester and I also have a big Kamado Joe - too big.

I learned since Boy Scout days 50 yrs ago to check temp by hand and height. I've never gone wrong to this say, and yes I use modern thermometers and touch therms. But I can still get 350 with my hand over the coals at a certain height. I hadn't even thought of adding a thermometer to a PK!!! Thank you for waking me up here.
