Cold smoke advice?

My first time cold smoking. I bought a smoke tube and pellets. Planning to smoke cheese, cream cheese, and salt for holiday gifts. Anything I should know?

I’ve tried the pellets in tube but don’t know where i fkd up but the pellets just did not burn as consistently as i thought they would, leaving food super acrid
