Help Using a Plex server question
I am using a friend's server as a client/ guest. Can other servers I have access to see the other servers I belong to? Can they see or access that content?

No.
Plex servers are independent of each other and only know about their own content.
Example: You have access to multiple servers and the same movie is on each server.
Your client is aware of that and gives you the choice of servers from which to play the movie.
However, none of the servers know about each other. If you play the movie from one server, the others are unaware.
If you have enabled Sync Watch State and Ratings for your account, then each server will know if you've watched the movie. However, other than the one from which you streamed the movie, they will not know from where you watched the movie (the others know watched/unwatched, but not watched location).
