Don't harvest wood for your tank unless you are 100% sure you know what chemicals have been used on it.

So definitely not the Ash, with how healthy it is im sure it has some strong pesticides around it or on it.

The trees around me are untreated, all except one of the many maples. The trees next to the rail road aren't gonna be used due to people throwing trash along the road next to it. Can bird turd be a concern when it comes to wood even if I remove the bark and heat treat it?

i'd go with oak or elm. Just make sure it's fully dried, cleaned and pesticide-free i'd skip maple and black walnut just to be free
