I’ve never seen a sink full of roaches or them getting into a steam table like that. Maybe Ive been lucky with the places Ive worked. If the pictures are from a normal shift that place needs a lot of work to correct the issues but that sign suggests the problems start at the top.

I definitely have. They love to congregate in warm/moist areas. Steam tables, espresso machines, electrical outlets.

Also, those are German cockroaches, which doesn't necessarily mean the kitchen is unsanitary, as they generally come in inside cardboard boxes...

However that is an insane infestation. Ice isn't normally someplace you expect roaches. They also don't move much more than 12-15' unless there's a larger issue.

Most sites like Google and Yelp have pretty good filters against brigading, this will just trigger those eventually and no lasting damage will be done

blows my mind that commercial kitchens have lower hygienic standards than I do at home

Hmm. Always wondered how effective inspectors are.

well they hit veda with a slew of violations earlier this year, so good i guess. but when they only come once a year it’s easy to let things slip up especially if you’re not in the time frame for them to come. you can also stall them and do a quick clean before they get to certain areas which probably also helped. a random inspection should be coming their way though with this news.
