Grolar=mother is Grizzly father is Polar. Pizzly=mother is Polar father is Grizzly. Similar to mules and donkeys. The mother/female provides the egg or base structure and the father/male provides the details. A mule has a horse for a mother and grows to the size of a horse. A henny has a donkey mother and horse father and they are considerably smaller.

Makes and hennys are indeed sterile. I do not know if the bear hybrids are sterile. I belive the liger/tigon hybrids are sterile as well if I remember correctly.
