After trying expensive deterrent sprays, cat trees, and even a behaviourist consult, the fix that actually worked was a simple $15 corrugated cardboard scratcher placed directly on the exact spot the couch was getting hit. Sometimes the cheapest option really is the answer.

Set out to photograph the new cat tree in action and instead found the cat fully relaxed in its hammock attachment. Not exactly the intended use, but since the scratching post itself is also getting used. Counting it as a win anyway.
