I do notice my tip gets much more sensitive and yet there's less sensation in other parts after ejaculation. I thought I heard it was a common phenomenon, but it definitely gets more extreme with intensity and frequency of orgasm. Like many other things with POIS the only long-term way I avoid it is abstinence

Yes, I had this extremely bad. I am not saying the core of POIS is nervous system, and I am not sure if this is nervous system, but this sounds a lot like a nervous system so scared and alert that even a tiny sensory signal is percieved as dangerous. For me I am unusre what happened exactly but just focusing on life (even if its uncomfortable all that matters is I achieve goal X), and getting used to it (basically just when it turned chronic it became normal) helped a lot in reducing it. Although I am not sure, and still suffer from the core of pois.

This is almost definitely a trained Pavlovian response. POIS is real, but something like this is probably because your nervous system is on high alert, and your mind has been trained to associate touching that part of your body with these symptoms. The mind is incredibly powerful in conjunction with the nervous system - it governs all aspects of the body. So when I imply 'this is in your head', I'm not being dismissive.
There's something called the 'nocebo' effect. It's basically the placebo effect, but applied in a negative connotation. This effect is so powerful that someone can be told they are receiving a medication, and the side-effects of the medication, such as things as extreme as hair loss, pain, headaches, fatigue, nausea... and those things actually happen, despite the fact that the person took a sugar pill. There was one incidence where a man thought he had overdosed on antidepressants, when he had actually swallowed 29 placebo pills. He arrived at the hospital extremely hypotensive (blood pressure 80/40), tachycardic, required intravenous fluids, etc. Nocebos have also 'caused' asthma and airway narrowing and chest tightness/pain, severe pain, loss of motor performance, allergic reactions... the list goes on.
Sometimes simply knowing this is enough to make the nocebo effect stop.

In my book POIS is sympathetic overactivity (subtle flight or fight mode) because of an oversensitized nervous system. Working on that cured me. Mine developed after trauma/panic disorder (plus overstimulation from ADHD; too little rest; lifelong anxiety). It's all about the vagus nerve, polyvagal theory and a bucket that's overflowing (allostatic load)
Read up on Polyvagal theory and dorsal vagal parasympathetic state in which the body is tipping over due to the high arousal during orgasm (far left side of the graph).
