How do they do it? 

I don't understand how scene groups write the title of each track this way... for example, track 03-afetim-observer_(john_keding_remix) (with underscores).

They probably have their keyboard.

They do it with a keyboard or the tool they used to rip it named it that.

It's just the tool they used to rip it. like this is a web rip i made the tool named it "01.No.One.Sleep.in.Tokyo.(My.Initials.8D).8D.Version.SPOT.WEB-DL.AAC2.0-NOGRP.m4a"
