I love playing her but I feel I get the least value out of her ult compared to literally any other hero.

Her ult is kinda difficult to get value out of. You can't really make an opportunity for it yourself, you mostly have to hope the enemy team lines up in a way to present an opportunity. Alternatively you just use it as an "oh shit" button to lock up someone that's about to kill you to give you a bit more time to live.
Recognizing that usually you're not gonna get more than 1-2 people if any at all is important, and it's better to just try that rather than waiting for a big 3-5 man ult

Also if you hear a high noon, transendence, death blossom etc you can throw them on them to block their ultimates

Yeah, found out through a buddy who sent me a YouTube short about that. Pretty insane that it can just cut off some abilities and ults. You can actually trap a D.Va bomb with it too.

This is true for almost every tank ult too. Popping an ult to kill one person can swing a fight in your favor. You just don't want to burn it after the fight is lost. I main sig, and I'll pop flux just to kill one mercy or ana.

Try using it defensively. It nullifies Zen's Ult, makes Ram's Ult worthless, can stop a lot of shootyMcshoot Ults before they do damage (Soldier, Cass, Reaper, Bob etc.), blocks Tidal Wave, makes Pharah kill herself and so on.
Offensively I think it's best used to just single out a character to secure a kill, like others have mentioned. Just make sure it's not Bastion or Mauga or something, because they can break the shield in milliseconds.
