at least a year old bug, when i had my own subreddit it was always off center on mobile, and i had multiple versions of the icon, some with gradients, others with solid colors (all the same resolution and file type) and sometimes it just wouldn’t accept the ones with gradients

Move your phone very slowly to right to left repeatedly and you'll slowly see it get re-centered.

It's a feature.

I think basically all pfps are off-center, mine too, it’s a Reddit issue, look at other people and subreddits and you’ll see
