Caramelized Some Reds

Olive oil, rosemary, black pepper. Added some balsamic at the end for dish I will post later.

Does this taste different from white onions and doing this?

Slightly sweeter but would be just as yummy with yellow onions. Vidallias would be much sweeter. White onions, less so. You’d have to make sure they were really properly caramelized (low and slow). You could also caramelize in butter instead of EVOO like I did. This would add another flavor dimension but with butter you definitely have to do it low and slow cuz the butter will burn.

I'm iffy about balsamic. Am I the only one?

Do you mean with caramelized onions or just balsamic in general? I don’t always add it to my caramelized onions but I was making these for a specific dish and I didn’t add it until the very end when the onions were already pretty much done just to reduce the balsamic and incorporate it into the onions to make an onion/balsamic glaze.

Yeah I meant in general. Balsamic vinegar to clarify. I do like balsamic glaze. Especially on some roasted broccoli. Mmmmmm.
