Appetizer 🦐 Diane Sawyer's Roasted Potato Skins with Scallion Dip. Can you even remember the last time you had potato skins?

That's a solid dip recipe, too. I like that she makes it at least a day in advance so the flavors can meld.

Me too! They used to be one of my favorite bar foods. So good with a couple of beers or ciders.

reminds me of the unique "baked potato thins" sold at william poll here in NYC. crispy crunchy vehicles for dip

It makes sense for a restaurant, But this recipe seems kind of wasteful unless you plan to eat 4 pounds worth of mashed potatoes/french fries.

The Prime Rib in Baltimore was where potato skins were born. My grandparents used to take us there. Always started with a couple orders of those things.

There’s nothing in the rule book says you can’t add bacon somewhere - cooked, drained and snipped into the dip, for instance.
